A fast day friendly fish gratin! Totally delicious and satisfying, a one-dish meal. The cauliflower makes an excellent alternative to potatoes.
Either feed the family or freeze the cooked chicken parmigiana in individual portions. Remember to quarter the salad quantities if just serving one though!
