Turkey burgers with beany root vegetable mash and spinach

  • 400g turkey mince
  • 160g onion (one large onion)
  • 4 tsp dried sage
  • 1 tsp smoked paprika
  • 200g canned cannelini or haricot beans, drained
  • 275g celeriac, peeled and chopped
  • 275g swede, peeled and chopped
  • 80 g low fat greek style yoghurt
  • 400g spinach
  • 20g butter
  • 1 tsp ground nutmeg


For the burgers
  • Grate the onion or chop very finely
  • Add the onion to the turkey mince
  • Add the paprika and sage
  • Mix well with your hands
  • Form into 4 patties
  • Barbecue or grill under a hot grill for about 10 minutes

For the mash

  • Peel the celeriac and swede and chop into chunky pieces
  • Drop into boiling water and simmer until soft
  • Drain the water
  • Add the cannellini beans and yogurt
  • Mash with a potato masher

For the spinach

  • Strip out any woody stems from the spinach leaves
  • Wash well
  • Place in a saucepan with just the water clinging to the washed leaves
  • Cover and simmer for 2 minutes, stirring occasionally
  • Add the butter and the grated nutmeg
