Method

For the burgers
  • Grate the onion or chop very finely
  • Add the onion to the turkey mince
  • Add the paprika and sage
  • Mix well with your hands
  • Form into 4 patties
  • Barbecue or grill under a hot grill for about 10 minutes

For the mash

  • Peel the celeriac and swede and chop into chunky pieces
  • Drop into boiling water and simmer until soft
  • Drain the water
  • Add the cannellini beans and yogurt
  • Mash with a potato masher

For the spinach

  • Strip out any woody stems from the spinach leaves
  • Wash well
  • Place in a saucepan with just the water clinging to the washed leaves
  • Cover and simmer for 2 minutes, stirring occasionally
  • Add the butter and the grated nutmeg
