Ingredients

  • 300g fresh tomatoes
  • 4 tablespoons pesto
  • 4 tablespoons ground almonds
  • 2 garlic cloves
  • 4 large courgettes

Method

  • Place tomatoes, pesto, ground almonds and garlic cloves in a food processor and whizz up to make a smooth sauce
  • Put the mixture in a saucepan and heat through, add salt and black pepper to taste
  • Meanwhile, using a julienne grater, a vegetable peeler or a spiralizer, slice the courgettes into thin strips
  • Microwave the courgettes for 3 minutes on high power, drain off the excess liquid
  • Mix the sauce with the courgettes and serve
