Smoky BBQ chicken with tomato salad


  • 4 Chicken Breasts cut into thin strips across the grain
  • 1 packet Old El Paso Smoky Barbecue Fajita Spice Mix
  • 500g carton passata
  • 35g chopped onion
  • 45g chopped bell peppers
  • 10 sprays of olive oil (about 1 tsp)
  • 120g fresh tomatoes for salad
  • 50g cucumber for salad
  • 20g onion for salad
  • 40g peppers for salad
  • sprinkling of fresh coriander
  • a medium size Old El Paso soft tortilla


  • In a large frying pan fry the onion, pepper and chicken in the oil until cooked through.
  • Add the spice mix and coat the chicken and vegetables.
  • Add the passata and simmer for twenty minutes until the sauce is thickened.
  • Serve with the tomato, onion and pepper salad (47 cal)¬†and a medium size Old El Paso soft tortilla (128 calories).
