Stuffed Aubergine Parmigiana

Great for portion control, as I am greedy where tomatoes and mozzarella are involved, and it looks pretty, too.



  • 1 Aubergine (approx 300g)
  • 1 400g tin of tomatoes
  • 1tbsp tomato puree
  • 3 cloves of garlic, chopped or crushed through a garlic press.
  • 60g grated mozzarella
  • 1 tsp of thyme either dry or fresh
  • 40g breadcrumbs
  • 20g parmesan cheese (or vegetarian alternative)
  • salt and pepper
  • 2 tsp olive oil
