Mushroom Salad

Mushrooms with sage, egg and cheese.

Ingredients

  • 1 tsp olive oil
  • 1 small red chilli, finely chopped
  • 1 tsp garlic, crushed
  • 2 sage leaves
  • 100g wild mushrooms, any type,
  • washed and dried
  • 30g dried porcini
  • salt and pepper
  • 1 egg
  • 50g rocket leaves
  • 1 tsp Parmesan shavings
  • sage leaves to serve

Method

Add the dried porcini mushrooms to boiling water for 30 minutes to soften them. Keep the water at the end!
