Courgette Soup

A lovely courgette soup with pine nuts and parmesan.

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 500g courgettes, chopped
  • 50g potatoes, peeled and chopped
  • 1 clove garlic, peeled and crushed
  • about 1 litre vegetable stock
  • 200g watercress, thicker stems removed
  • 1 tbsp pine nuts
  • salt and pepper
  • 1 tbsp grated Parmesan
  • fresh basil leaves

Method

Saute onions in oil. Add potatoes, courgette and garlic and fry for 10 minutes. Then add stock, and leave to simmer for 10 minutes.
