Prawn Stir Fry

Tonight we had a stir fry with loads of veg, king prawns, and vermicelli noodles, and it came in at under 300 calories for a huge serving. Nobody went hungry this evening, and the children enjoyed it.

Ingredients

  • 1 tbsp olive oil
  • 1 red and 1 yellow pepper, finely sliced
  • 180g cooked king prawns
  • Vermicelli rice noodles. I get a 300g bag of these fresh from Sainsburys.
  • Stir fry veg of your choice. For this, I got the edamame stir fry mix from Sainsbury's, which has broccoli, red onion, soya beans, carrot, chinese leaf, and cabbage.
  • 175ml packet of ginger and teriyaki stir fry sauce (Also from Sainsbury's)
